Traditionally a housewife boils the milk and keep it undisturbed in a vessel and after some hours, layer of fat deposit on the top. This is because fat is lighter than serum portion ( density of fat is less than skimmed milk) and hence rises to top. A centrifugal separator uses this property, increases the separation speed multifold by subjecting the milk to high centrifugal force. Separator bowl is provided with a number of discs, which increase the area for separation of two layers ( cream and milk). Design of separator bowl determine the performance efficiency and skimming efficiency. Angle of discs, location of milk feed inlet hole, gap between discs, number of discs, speed of bowl are the design factors for the performance of Cream Separator.
