Raw milk is a highly perishable product, so it should be chilled as soon as possible. National Dairy Development Board standards specify that milk must be cooled from about 35°C to 4°C while collecting milk. At this temperature, the growth of bacteria is hampered, and therefore all dairies require to cool milk to 4°C. Cooling time should be as short as possible. Most manufacturers of milk coolers define it as a maximum of 3 hours. Shorter cooling time, the higher the quality of the milk and fewer bacteria in it.
