Paneer or Indian cottage cheese is a very popular Dairy product in the country being manufactured both in organized and unorganized sectors. A rough estimate put 5% of the milk production being converted to Paneer or chana for various delicacies or for direct consumption.
With the current milk production being approx. 150 million tons per annum, about 7.5 million tons is converted to Paneer and Channa. This translates to about 25000 tons of milk per day yielding about 5000 tons of Paneer and 20000 tons of whey.
Assuming 0.5 to 1% fat (average 0.75% ) in the whey, approx. 150,000 kgs of fat valued at Rs 600 lakhs, gets drained in the whey daily.
This is not only an economic loss, it also puts a load on the ecology or more energy to treat the dairy effluent before drainage.
